Makes 8 quesadillas.
Ingredients:
Barbacoa (2 pounds pre-cooked)
16 regular sized Flour tortillas
8 oz Borden shredded Taco Cheese or Four Cheese Mexican
If using a comal; 1/2 teaspoon oil (canola/vegetable)
If using a comal:
1. Heat the comal on medium high and dab oil on it.
2. Put the quesadilla together, and heat in the microwave for 30 seconds.
3. Place the quesadilla on the comal, flip when tortilla starts to brown.
If using a foreman grill/quesadilla maker:
1. Plug in the grill and let sit for a minute
2. Put the quesadilla together on the grill
3. Add top tortilla and close the grill for a minute or until tortilla has been sealed
4. Make triangle slices with a pizza cutter.
5. Enjoy!
