This is an easy and effortless alternative from the traditional Mexican "carne guisada". I knew I had a roast, and I knew I wanted it to have a Mexican style flavor. This is what I did...
This makes for about 10 tacos
Ingredients:
1.5 Pounds Beef Chuck Roast
1/2 Onion
1 Serrano Pepper
4 Ounces of Water
Lawry's Garlic Salt (to taste)
Salt (to taste)
Pepper (to taste)
Cumin (to taste)
Instructions:
1. Pre-heat oven to 375° (I use an Oster convection countertop oven...much faster than a gas oven!)
2. Rinse and roughly chop produce.
3. Pour the water in a baking dish (I used glass), place the roast over it, and sprinkle the produce and spices.
3. Cover with foil and bake for 1 hour, or until desired doneness has been reached.
4. Slice beef into bite sized pieces.
5. Enjoy!
