Ahhhhh...con un chorizito con huevo, frijoles, aguacate, etc. You can even make wannabe taco bell tacos! Took me a while to find a recipe that was easy...
For 8 tortillas:
Ingredients
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
4 tbsp salted butter melted (1/4 cup) (if unsalted, add another 1/2 teaspoon of salt)
1/2 cup to 3/4 cup warm milk
Instructions:
1. Mix all the dry ingredients in a bowl.
2. Add the butter and knead together.
3. Add the warm milk little by little and knead (adjust as needed: it is humid where I live, so I use 1/2 cup, if I use 3/4, dough will be too wet).
4. Keep kneading until the dough is no longer sticking to your fingers. If it is still sticky after a few minutes, add a tbsp of flour at a time until you get a soft and un-sticky consistency.
5. Cover dough in the bowl with a wet paper towel, and let sit for 10 minutes.
6. Once the 10 minutes have passed, separate into 8 firm balls.
7. Dust the work surface with flour (I use parchment paper on top of the counter)
8. Flatten dough balls with a rolling pin (I use metal non-stick).
9. Keep flour nearby to sprinkle some as you are shaping the tortillas (that will help them from shrinking).
10. Around the 5th tortilla, turn on the skillet on medium-high heat.
11. When you are done shaping all 8, put the tortilla on the skillet for 20 seconds, and when small bubbles start to form, turn. When the tortilla inflates, turn again. When it inflates again, it's ready, and on to the next!
