The cornerstone of Mexican cuisine. A staple in Mexican Households. Something Mexicans love to eat on Sunday mornings. What helps us start our day.
Most meat markets sell barbacoa by the pound, but it usually has a lot of fat. That is the reason why I started making my own.
This recipe serves 3-4 people. Use Guerrero corn tortillas or La Ranchera flour tortillas.
Ingredients:
2 pounds boneless chuck roast beef
1 1/2 cubes of Knorr Beef Bouillon Cubes
3 bay leaves (laurel)
3 cloves of garlic
1 teaspoon of salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon McCormick® Italian Seasoning
12 oz of water
Instructions:
1. Put all of the ingredients in the crock pot, starting with beef, spices, then water.
2. Set crock pot on high and cover.
3. Leave on high for 5 hours if beef is thawed, 7 if frozen.
4. Enjoy!
