Simple.Hearty.Easy.
This is a basic Mexican dish that includes ingredients from a few of the different food pyramid groups. This recipe makes 16 corn tortilla tacos or 10 flour tortilla tacos. For corn we use Guerrero brand tortillas, for flour, La Ranchera.
Ingredients:
1 pound ground beef
1 tablespoon oil (canola/vegetable)
1 garlic clove
1 small serrano pepper (optional)
2 slices of onion (optional)
2 slices of green bell pepper (optional)
1/2 tomato
1/4 teaspoon salt
1/4 teaspoon pepper
3 medium sized russet or red potatoes
10 oz water
1. Put the oil in a pan, set to medium-high heat.
2. Sauté the garlic and tomato, (add the 3 optional ingredients if desired).
3. Add the salt and pepper.
4. Add the ground beef, brown it, and drain the excess oil.
5. Place the potatoes in a plastic bag, set in the microwave and press the "potato" button 2 times (this will soften them but not too much).
6. Add the water to the pan and mix in the Knorr powder/cubes.
7. Cut the potatoes into squares and mix them into the ground beef.
8. Cover with a lid and leave at low heat for 10 minutes.
9. Serve.
